Easy, No-Measuring Complete Dinner Recipes that will WOW!

Does the prospect of measuring halt your cooking endeavors? Crafting meals should be a flowing, creative process. Measuring interrupts the sequential steps one takes in prepping, chopping, mixing and plating, while magic ensues when the eyes, taste and intuition subdues during cooking. Here are some straightforward recipes to craft a complete dinner that will WOW your tastebuds and guests!


Teriyaki, Ginger Skirt Steak

  1. Mix together teriyaki sauce, olive oil, ginger, garlic, honey, salt and pepper. 
  2. Marinate your skirt steak in the sauce mixture for at least an hour.
  3. Broil your skirt steak about 5 minutes on each side (this will vary depending on how you like your steak cooked).
  4. Slice and serve.

Open-top Portabella 

  1. Preheat the oven to 350 degrees F.  
  2. Cut the stems off your portabella mushrooms. Discard the stems and set the open-top portabella mushrooms to the side.
  3. Line a baking sheet with parchment paper. Place the open-top portabella mushrooms, face up on the baking sheet. Lightly glaze or brush the mushrooms with olive oil. 
  4. Finely chop a mixture of vegetables and herbs such as carrots, peppers, shallots, garlic, and parsley. 
  5. Cover the portabella face with the chopped carrots, peppers, shallots and garlic (wait to add parsley until the end). Add salt and pepper for taste. Dripple a little more olive oil on top of the veggie assortment.
  6. Place the baking sheet in the oven and cook until portabella mushroom and ingredients are almost cooked through (this may take about 20 minutes).
  7. Take the baking sheet out and add your parsley.
  8. Place the baking sheet back in the oven for a few more minutes until portabella mushroom and ingredients are completely cooked.
  9. Serve each piece whole.

Crispy, Roasted Mini Potatoes

  1. Preheat the oven to 350 degrees F. 
  2. Rinse your mini potatoes (I prefer the tricolor ones if possible to buy).
  3. Largely chop onion and red pepper. Set aside.
  4. Put your potatoes, onions and red peppers in a baking pan. Add olive oil, salt and pepper. 
  5. Place your baking pan in the oven and cook until potatoes, onions and red peppers are browned. 
  6. This potato dish tastes amazing with the steak sauce!
